5.1 Icing

Icing sugar is granulated sugar that has been crushed and grounded into fine powder form. It is used for decorating cakes, to give them that final classy look that you see so often and is part of sugarcraft. You would normally place your toppings after you have applied your icing but even icing can be taken as your final topping especially if you are able to make elaborate icing finishes.

You will need some tools to work with when you are using your icing to decorate your cakes. 5.2 Fondant, Gum paste and Marzipan

Fondant is made up of sugar, corn syrup and water. There are two main types of fondant, the rolled fondant and the poured fondant. The poured fondant is made from sugar, water and corn syrup. The rolled fondant is poured fondant with glycerin or gelatin or both added to it to make a dough that is impressionable.

Gum paste is a malleable compund made from shortening, egg whites, confectioner's sugar and is used to make detailed cake decorations. Marzipan is made up of ground almonds, sugar or honey and egg whites and is used for cake decoration and making confectionery.

You can add coloring or flavouring to your fondant, gum paste and marzipan according to your taste and use them in place of icing or as a filling for cake and pastry decoration. You can also use them to make sweets and other confectionery. There is also another type of fondant called the chocolate fondant which is a kind of pudding.

6. Food Colors and Food Flavors

Just as the words suggest, food coloring is used when you want to add color to your food. Food coloring enhances the aesthetic or visual value of your cake. Food flavors on the other hand enhance the taste of your cakes, cupcakes, muffins and other pastries. In cake decoration, food colors and food flavors are popular for working with icing, buttercream, fondants, gum paste and other sugarcraft.

Food flavors include the likes of vanilla flavor, strawberry flavor, chocolate flavor and others. There are some food colors that add flavor to your cakes and some food flavors that add color to your cakes. Food coloring can be naturally or synthetically made and it comes in various physical states or forms namely,

6.1 Powder Form

As the words suggest, this is food coloring in powder form. It is mostly useful when you cannot be able to include any moisture whatsoever as an ingredient in your cake or pastry making recipe. It is suitable for dry cake mixes and other dry pastry mixes.

6.2 Liquid Form

This is a type of food coloring that is water based. This kind of food coloring is the one you buy when it is already in the liquid form in a bottle. The liquid form of food color can also come as a spray and an example is the shimmering Wilton color mist food color spray. This Wilton color mist spray comes in black, silver, gold among other colors and is used to decorate fondant, chocolate, buttercream, icing, gum paste and other sugarcraft for cakes.

6.3 Liquid Gel Form

Liquid gel type of food coloring contains corn syrup or glycerine or both and is viscous and also comes in a bottle.

6.4 Gel Paste Form

This is a highly viscous form of liquid gel food coloring, that is so viscous it forms a paste. It is not sold in bottles as the squeezing action will not render the paste mobile, so it comes in containers with screw caps. You dip a tiny spatula or stick inside the paste and scoop a tiny amount which you will then use for your coloring. This version is usually highly concentrated so you just use tiny amounts at a time and this makes it last longer than the other types.

If you only have your flowers without the stamen, they will not look complete or similar to how flowers look in the wild, hence the need to have them.

21.3 Flower Nails or Decorating Nails

Flower nails or decorating nails are nail shaped little "stands" that you stick into your cakes and they have two functions. The first function is for cake baking and the second is for cake decoration. In the first function, the flower nails are used with bigger cakes when you want them to bake evenly, since when baking a cake, the heat is transferred from the outside slowly to the inside.

This makes the outside bake faster than the inside and can result in uneven baking, but with a flower nail you are able to make a correction to this. To do this, you place the flower pin on its base in the middle of the baking pan and then pour your cake mix on it. Bake even strips are also used for this same and exact purpose. Flower nails can also be used in this way to prevent the cake from forming a dome by sticking it on the upper side of your cake mix before baking it. The flower nails that are used for this first function with cake mixes, are made from stainless steel.

The second function of flower nails makes use of their little flat tops on which you can place tiny flower shaped icing cream, gum paste or fondant buds. This way the flower nails act like the flower's sepals and stalk.

27. Pastry Brush or Basting brush

29. Airbrush Kits

An airbrush is a gadget that enables you to spray edible paint on cakes or pastry using a single action or double action spray gun. They use compressed air to spray the edible paint or food color and so come with a standard air compressor machine. Here is where your cake decorating stencils come in handy, as you can spray on them against your cakes, using an airbrush, to create lovely designs. You do not have to use a stencil and can do free style design art work on your cake and have lots of fun while doing so!

31. Almonds

Almonds are oval, edible seeds from the almond tree, with woody shells covering them. They are nutlike but they are not classified as nuts. Almonds are used extensively in cake and pastry decoration and as ingredient since you can produce almond oil, almond flour, almond milk, almond butter or almond paste- also known as marzipan. If you level your cake several times you will have several layers and the cake leveler will enable you to get even, equal layers.

Torting a cake is simply dividing it into two or more horizontal layers. A cake leveler is the best tool for this job but some people who are skilled enough improvise and are able to do this using either a knife or a dental floss.

34. Cake Scrapers, Dough Scrapers and Cake Smoothers

Cake scrapers, cake side scrapers, cake smoothers and cake rulers are used to achieve a smooth, even glaze or finish to your cakes. This is done by scraping and molding the cake decoration, usually icing, gum paste, fondant or any other sugarcraft in use. They are also used for "gathering together" or scraping your ingredients on surfaces or from surfaces. For example, when you are emptying sticky cake mixes from bowls, trays or other containers, they are more efficient to use.

37. Cake Release Agent

A cake release agent is an oil or grease based fluid that you apply on your baking pans, tins or containers to prevent the cake from sticking on them. As the name suggests it enables you to release the cake once it has baked, from the baking pan onto the cake board. This reduces incidences where cake crumbs form because of all the sticking, which causes uneven cake surface.

38. Castor Sugar

Castor sugar is simply granulated sugar that has been crushed and grounded into white or light brown fine powder. Castor sugar is also called caster sugar. It dissolves and melts much more readily than your regular sugar and gives texture to baked goods, so it is more appropriate with recipes that require fast dissolving sugar.

39. Brown Sugar

Brown sugar is used for baking, alongside other normal uses that you would use sugar for. There are two kinds of brown sugar, light brown sugar and dark brown sugar. Light brown sugar is more commonly used for baking than dark brown sugar. Dark brown sugar is used when you want to add more flavor or color to your baked goods. A popular brand of brown sugar is the Clovers brown sugar.

40. Pizza Cutters

There are two kinds of pizza cutters, smooth pizza cutters and serrated pizza cutters. Paper straws, as the words suggest, are your usual straws but that are made from paper. Gluten is a composition of proteins that is found in wheat and closely related plants like rye and barley. Gluten free flour is flour that completely lacks gluten. There are times when the recipe for making a cake or a pastry requires that you do not use the egg yolk or the egg white. In such cases you will need to use an egg white separator to separate the egg yolk from the egg white.

There are several ways to separate the egg yolk and the egg white using an egg white separator. Some separators act like sieves, catching the egg yolk and letting the egg white pass through. There is another type of separator that looks like an egg with a pipe attached to it. Once you have cracked your egg and spilt all its content in a container, you squeeze the egg looking part of the separator while directing the pipe attached to it at the egg yolk.

You then release the egg looking part of the separator and this action causes the separator to suck up the egg yolk. After the egg yolk has been sucked up, you squeeze the separator to release the egg yolk in a different container.
